CANDIED PECANS
5 cups pecan diamonds
4 ounces sugar
2 teaspoons kosher or sea salt
1 teaspoon ground ginger
2 tablespoons honey
2 teaspoons canola oil
1 teaspoon cayenne
INSTRUCTIONS:
- Toast pecans in oven.
- Combine sugar, salt, and ginger.
- Bring honey, oil, and 2 tablespoons of water to a boil.
- Reduce heat, add pecans, stir until liquid dissolved.
- Add pecans to sugar ginger mixture, lay out on a silpat mat.
