CHILE SPIKED MANGO CHUTNEY
2 (whole) medium diced onion
4 tablespoons minced ginger and garlic
6 whole charred kung pao peppers
1 tablespoon chile pepper flakes
1 teaspoon cardamom
12 (whole) small diced mangoes
2 jars mango chutney
3 cups sugar
3 ounces rice vinegar
INSTRUCTIONS:
- Saute onion, add garlic and chopped kung pao peppers.
- Add chile flakes, cardamom, fresh mango, and 2 jars of chutney.
- Reduce at low heat for 20 minutes, add sugar, and reduce at low until desired consistency is achieved. Add vinegar at this point.
