CREAMY GARLIC SCAPE SOUP

    Ingredients

    Instructions

    1. Sauté onion garlic and add chopped scapes.
    2. Add celery, roasted garlic, wine and vegetable stock.
    3. Let simmer for 20 minutes until tender and aeromatic.
    4. Puree with a hand blender and thicken at this point with roux if desired.
    5. Season with salt and pepper, and whisk in crème fraiche.
    6. Portion and garnish with chopped chives.
