CREAMY GARLIC SCAPE SOUP

Ingredients
- 1 small spanish onion diced
- 4 stalks celery
- 1 lb. roasted garlic scapes
- 1/2 cup roasted garlic cloves
- 2 tablespoons lemon thyme chopped
- 1 cup dry white wine
- 1 quart vegetable stock
- 1 cup crème fraiche
- roux for thickening optional
Instructions
- Sauté onion garlic and add chopped scapes.
- Add celery, roasted garlic, wine and vegetable stock.
- Let simmer for 20 minutes until tender and aeromatic.
- Puree with a hand blender and thicken at this point with roux if desired.
- Season with salt and pepper, and whisk in crème fraiche.
- Portion and garnish with chopped chives.
