FRESH LIUZZI MOZZARELLA SALAD WITH ROASTED BEETS, CIDER VINEGAR REDUCTION, RADISHES AND BASIL

Ingredients
- fresh mozzarella from Liuzzi Market
- 1 cup cider vinegar
- 1/2 cup sugar
- red beets
- radishes sliced
- fresh basil leaves
- sea salt for seasoning
- olive oil
Instructions
- Purchase fresh mozz locally from liuzzi market. Splurge and buy the buratini mozzarella, different than regular mozz, has soft interior like fresh cream. AMAZING!
- Take 1 cup cider vinegar and add ½ cup sugar and bring to a light boil. Then chill.
- Roast red beets in tin foil in oven at 350 degrees for 45-55 minutes. Check doneness with a skewer. Chill when done.
- Serve with fresh sliced radishes and basil leaves.
- Arrange on plate, season with sea salt and favorite olive oil, then spoon over chilled cider vinegar reductions.
