FRESH LIUZZI MOZZARELLA SALAD WITH ROASTED BEETS, CIDER VINEGAR REDUCTION, RADISHES AND BASIL

    1. Purchase fresh mozz locally from liuzzi market. Splurge and buy the buratini mozzarella, different than regular mozz, has soft interior like fresh cream. AMAZING!
    2. Take 1 cup cider vinegar and add ½ cup sugar and bring to a light boil. Then chill.
    3. Roast red beets in tin foil in oven at 350 degrees for 45-55 minutes. Check doneness with a skewer. Chill when done.
    4. Serve with fresh sliced radishes and basil leaves.
    5. Arrange on plate, season with sea salt and favorite olive oil, then spoon over chilled cider vinegar reductions.
