MARKET MENU BACON VINAIGRETTE

Ingredients
- 4 strips thick cut bacon
- 2 tablespoons scallions sliced
- 1 tablespoon red onion chopped
- 1 tablespoon chives
- 1 tablespoon parsley chopped
- 1 teaspoon mustard seeds
- 1 teaspoon coriander seeds
- 1 tablespoon dijon mustard
- 1/3 cup cider vinegar
- 3/4 cup vegetable oil
- salt and pepper to taste
Instructions
- Slowly render the bacon until crispy.
- Do not drain the fat.
- Add mustard seeds and coriander seeds cook for a few seconds.
- Add scallions and red onions cook about one minute.
- Add dijon and cider vinegar.
- Whisk in blended oil.
- Add chives and parsley.
- Season to taste with salt and pepper.
- Course: Salad
