Goat Meatballs

Ingredients
- 1 pound goat meat ground from Blueslope Farms
- 2 tablespoons garlic minced
- 1 teaspoon ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon fennel seeds toasted
- 1 cup seasoned gremolata or fresh bread crumbs
Instructions
- Mix all ingredients together and roll into small meatballs.
- Bring half gallon of chicken stock to a boil and add meatballs and cook for 8 minutes.
- This will help them solidify and meatballs become much easier to work with.
- Remove balls from stock and let cool.
- When ready to serve, heat olive oil in large sauté pan and sear meatballs.
- Add to your favorite sauce and serve with pasta.
