OATMEAL COOKIES

Ingredients
- 1 cup butter softened
- 1 1/2 cups brown sugar
- 2 eggs
- 1/2 cup buttermilk
- 1/2 teaspoon salt
- 1 3/4 cups unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon allspice
- 1 teaspoon vanilla extract
- 2 1/2 cups quick cooking oats
- 1 cup raisins
Instructions
- Cream butter and sugars together until light; scraping sides of mixing bowl.
- Add eggs, one at a time and beat after each; slowly add buttermilk.
- Sift flour and remaining dry ingredients together in a separate bowl; add to butter mixture just until combined: do not overmix.
- Fold in oats and raisins by hand.
- Drop by tablespoon-ful onto parchment lined baking sheet or baking sheet lined with silicon mat.
- Bake at 350 for 10-12 minutes until lightly browned.
- Remove from cookie sheets and place on rack to cool.
