PHO BROTH

Ingredients
- 3 pieces dried star anise
- 1 cinnamon stick
- 4 whole cloves
- 8-10 pieces beef bones
- 3 tablespoons olive oil
- 1 onion chopped
- 3 carrots chopped
- 4 celery sticks chopped
- pinch black pepper
- pinch chili flakes
- 2 tablespoons fresh ginger minced
- 1/2 cup mirin wine
- 1/4 cup hoisin sauce
- 1 tablespoon bottled fish sauce
- salt to taste
Instructions
- Spread bones on large cookie sheet; roast until brown in 375 degree oven for about 40 minutes.
- In large stock pot, sauté all vegetables with olive oil until softened; add bones, mirin, and spices and let simmer for 2-3 hours. Strain and season with salt, pepper, hoisin and fish sauce.
- Serve with:
thinly sliced cooked beef
, fresh cilantro
, thai basil,
srirachi,
fresh mung bean sprouts,
sliced lime
, rice noodles.
