MARKET MENU SAFFRON ROASTED PLUMS

Ingredients
- 6 golden plums or yellow Mirabelle plums
- 6-8 threads saffron
- 1/4 cup water
- 1 vanilla bean split and seeds scraped
- 1/2 teaspoon crushed pink peppercorns
- 1/4 teaspoon crushed star anise
- juice of half an orange
- 6 tablespoons muscovado sugar or granulated sugar
Instructions
- Add the saffron thread to the ¼ cup of hot water and let sit for 4-5 minutes.
- Cut the plums in half and remove the pit. Place them on a roasting dish. Add the saffron water, star anise, pink peppercorns, vanilla bean, orange juice and sprinkle each half plum with muscovado sugar, or granulated.
- Bake the plums at 350F for about 20-30 minutes until tender.
- Cut into ¼ wedges. Serve warm with either vanilla or ginger ice cream and toasted almonds.
